Recipe Post: Taco Soup

Soooo it's pretty much FALL Y'ALL (more so in the Midwest, than here in Nashville) but with the colder temperatures and football on TV, I have the perfect, super easy recipe you can try.

TACO SOUP! (this is also a Weight Watcher recipe :) )!
Time needed to make this soup: 1 hour 30 minutes


 Ok, first things first, here are the ingredients you will need to make this soup.

~ 1 lb. ground round
~ 1 large onion - chopped into small pieces 
~ 1 package of Hidden Valley Ranch dressing mix
~ 1 package of Taco Seasoning Mix
~ 1 can of pinto beans
~ 1 can of chile hot beans
~ 1 can of whole kernel corn
~ 1 can of mexican diced tomatoes (I used the Red Gold Mexican Fiesta) 
~ 1 can of diced tomatoes (Red Gold)
~ 1 cup of water


My Easy Steps: 
1. Start to brown the meat and chopped onions. Draining excess fat, if needed. 
2. Get out a large cooking pot (needs to be able to hold all ingredients) 
3. While browning meat, pour all of the canned ingredients into the large cooking pot (5 cans total).
4. Add the cup of water into the cooking pot. 
5. Add the Ranch Dressing mix and Taco Mix into the cooking pot. 
6. When meat/onions are fully cooked, add meat/onion combo. to the cooking pot. Stir well. 
(Additional water can be added during this time, depending on how you prefer your soups, I think I added a half-cup more just to make it more liquidy.) 
7. Bring all contents of soup to a boil. Once boiling turn down the temperature and let simmer, covered for 1 hour. 
*Because the meat has already been cooked, you could eat at any time, however for best results, soup should be kept simmering and covered for 1 hour.* 
~~~ This soup can also be cooked for an hour in the crock pot instead of stovetop!~~~
~~~I like to eat this soup with crackers, oyster crackers, or even make some crispy, garlic bread to go with it!
