Recipe Post: Pumpkin Oat Chocolate Chip Cookies

Pumpkin Oat Chocolate Chip Cookies


These cookies are amazingly delicious and perfect for FALL! :)
Usually I am more of a 5-ingredient baker...so this recipe required a little extra effort. An extra trip to the grocery was needed, but well worth it. Also, be prepared to pull out the old mixer (mine hadn't seen light since last Thanksgiving). This cookie recipe was a Pinterest find, more specifically from the Cooking Classy website.


Cook Time: 30 minutes (beginner baker and cook) 
Makes Approx. 24 cookies, I made big cookies and some of the batter and cookies were eaten in the making...

Ingredients: 
~ 2 1/2 cups of flour
~ 1 1/2 cups of oats
~ 1 tsp. of baking soda
~ 3/4 tsp. of salf
~ 1 3/4 tsp. of cinnamon
~ 1/4 tsp. of ground nutmeg
~ 1/4 tsp. of ground ginger
~ 1 cup of unsalted butter, softened 
~ 1 1/3 cup of brown sugar
~ 2/3 cup of granulated sugar 
~ 1 egg
~ 1 tsp. of vanilla extract
~ 1 1/4 cup of canned pumpkin puree
~ 1 3/4 cup of semi-sweet chic. chips
~ 1 cup of walnuts or pecans (optional) 

My Easy Step: 

1) Preheat oven to 350 degrees. 
2) Mix together in large bowl: flour, oats, baking soda, salt, cinnamon, nutmeg, and ginger. Put aside for now. 
3) In electric mixer bowl, mix together: butter, brown sugar, and granulated sugar until creamy. 
4) In combo. from Step 3, add egg, vanilla extract, and pumpkin puree. 
5) Mix on slow until ingredients from step 3 and 4 are well blended. 
6) Mix in chocolate chips and (optional) nuts. I used walnuts and loved it. 
7) While mixer is on slow, blend in the dry ingredient mixture from step 2. 
8) Now that ALL ingredients are mixed together in the one large mixing bowl, let the mixture sit for about 5 minutes. 
9) Use a spoon to scoop the cookie-mix into individual cookies, onto a greased cookie sheet. 
10) Bake for about 12 - 14 minutes. Let cool for a few minutes after baking. 
11) Enjoy the Cookkkiessss! 

Side note: I am not a milk-drinker but these cookies tasted so good with a cold glass of milk! :) 

12) Let me know what you thought of this recipe, my husband is my official taste-tester but he is biased and thinks everything is "amazing".
